I agree with Ed's remarks about sheffield good for the main 2 courts - awful if you are on the non-slip bottom at 2m in pool 3 though! - the 2 pools we play on at ipswich are both quite shallow( ave1.75m ish!) this just seems to lead to bait-ball style play with everyone treading on each other. 2 to 2.5m seems to be the best (enough room to move without people getting vertigo!
